Ali Landry and 8th Continent Soymilk at Hawthorne Elementary

Amy Duong, the Grand Prize Winner of 8th Continent Soymik’s Ultimate Moms’ Club Sweepstakes, decided to elect Hawthorne Elementary to receive the $5,000 check to go towards funding for technology education. Ali Landry presented the check along side 8th Continent Soymilk’s Sara Lopez to an auditorium of smiling faces. The money will go towards newer computers and iPads for the students. Congratulations again to Amy Duong and Hawthorne Elementary!

Vegan Pineapple Upside Down Cake

Ingredients

  • 1 cup packed brown sugar, divided
  • 8 oz. fresh pineapple slices
  • maraschino cherries
  • 3 T. Egg Replacer
  • ¼ cup hot water
  • 3/4 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 ½ t. baking powder
  • 1 t. baking soda
  • ½ t. salt
  • ¼ cup agave nectar
  • 3/4 cup 8th Continent Soymilk
  • 1 6oz dairy-free vanilla soy yogurt
  • 2 T. canola oil

Directions

Preheat the oven to 350 degrees F.
Lightly oil a 9″ round cake pan and place pineapple slices throughout the bottom of the cake pan. Add the maraschino cherries in between the pineapple rings. Sprinkle the pineapple rings and maraschino cherries with 1/4 cup brown sugar until lightly covered.

In a small cup or bowl, combine the Egg Replacer and hot water until the mixture is gooey and congealed. Set aside.

In a medium-sized mixing bowl, sift together the whole wheat flour, all-purpose flour, baking powder, baking soda, salt and brown sugar. In another small bowl, mix together the Egg Replacer mixture, agave nectar, 8th Continent Soymilk, dairy-free vanilla soy yogurt and canola oil. Add the wet ingredients to the dry, mixing until just combined.

Pour the batter over the pineapple slices and bake until firm to the touch, about 35 minutes. If you aren’t sure about the time, use a toothpick to insert to the center of the cake and the toothpick should come out clean when the cake is ready.

Allow the cake to cool for 20 minutes. Place a plate over the top of the cake and holding these two together, flip and allow to rest. Lightly tap the cake pan so the cake will plop onto your serving dish. You can serve this cake either warm from the oven or chilled, but make sure to serve it with 8th Continent Soymilk to wash it down with!

Vegan Coffee Cake with a Citrus Twist

This Vegan Coffee Cake with a Citrus Twist is the perfect little sweet summer snack. It is vegan friendly and the citrus tones give you a natural boost of vitamin C.

Ingredients

Dough
4 cups of flour
1 Tbsp baking powder
3 tsp baking soda
1 tsp salt
1 stick vegan butter, melted
1 cup Light Vanilla 8th Continent Soymilk
1/3 cup orange juice
flour for kneading

Filling
1 cup brown sugar
3 Tbsp vegan butter, melted
1/2 tsp cinnamon
1 1/2 cups raw walnuts, minced

Topping
2-3 Tbsp crushed walnuts
2-3 Tbsp vegan butter, melted
3 Tbsp brown sugar
1 tsp maple syrup drizzled

Frosting
8 ounce vegan cream cheese
1 cup powdered sugar
1/3 cup orange juice
1/2 tsp orange zest
1 Tbsp vegan butter, softened

Directions

Preheat oven to 350 degrees Fahrenheit.

Combine all wet ingredients for dough in medium bowl. In another bowl combine all dry ingredients for dough.

Add the dry ingredients to the wet ingredients slowly while mixing thoroughly between each addition. Once all dry ingredients are combined with wet ingredients, knead the dough until it forms into a ball.

Sprinkle flour on a large surface and transfer ball of dough.

Flour a rolling pin and roll the dough in a rectangular shape until it is about 1/2″ thick.

In a medium bowl, mix together all filling ingredients. Once thoroughly mixed, distribute the filling evenly atop the dough.

Carefully lift one end of the rectangle and roll the dough, with the filling inside, until you have reached the other end.

Once the dough is all rolled up, cut into sections about an inch to an inch and a half wide.

Take a deep-dish glass pie dish and grease with vegan butter and put your cinnamon rolls in the dish with swirl side facing up. Combine all topping ingredients except for maple syrup and crumble atop the cinnamon rolls. Drizzle the maple syrup on top of the crumbs and put dish in oven.

Bake the dish for about 30 minutes, while the dish is baking- make the frosting!

Combine all the ingredients for the frosting. Blend with hand mixer. Chill until ready to serve.

After 30 minutes, remove dish from oven and allow the cinnamon rolls to cool.

Make your pot of coffee now!

Put a cinnamon roll on a dish, drizzle with the citrus frosting, pour yourself some hot coffee or a nice cold glass of 8th Continent Soymilk and enjoy!

Thanks Pops!- Strawberry and Blueberry Popsicles

With Father’s Day coming up, make your dad a sweet and cool treat with this recipe for what we have dubbed: Thanks Pops!

Ingredients:

  • 1 cup frozen Strawberries
  • 1 cup frozen Blueberries
  • 1 cup 8th Continent Soymilk (Vanilla or Light Vanilla)
  • Sweetener if desired (Agave Nectar or Honey)

Directions:

Dump all of these ingredients into a blender and blend until smooth! If you want it sweeter add agave nectar or honey depending on your preference and taste!

Once the ingredients are smoothly blended, pour into a popsicle maker container. (If you don’t have one of these- you can also pour into cups and place a craft stick inside each cup.)

Put in your freezer and enjoy when frozen!

Tip: To get the popsicles out of their containers- run under warm water to allow the popsicle to break free from the edges.

8th Continent Soymilk at Blogher Food 2012

After 8th Continent Soymilk had an amazing time at Hawthorne Elementary with Ali Landry presenting the check to go towards Technology Education, we met up with Solae- the company who provides us with our non-GMO soybeans. We hung around in Seattle, and set up a booth at the Blogher Food Conference 2012. This event was all about bringing together bloggers who’s main passions are developing recipes, giving diet tips, and making some delicious dishes!

Chef Peter Berley joined us at the booth to sign his cookbooks and answer questions about his delicious recipes. We passed out dairy-free panna cotta and some refreshing tropical smoothies!

We raffled off an iPad 3 and three of Chef Peter Berley’s cookbooks!

Shaina Olmanson from Food for My Family won Chef’s Cookbook: The Flexitarian Table

8th Continent Soymilk and Ali Landry at Hawthorne Elementary

The Ultimate Moms’ Club Sweepstakes ended and Amy Duong won first prize! She elected Hawthorne Elementary School in Seattle, WA to receive the $5,000 donation check to go towards Technology Education. Ali Landry of TV Guide Network’s Hollywood Girls’ Club came out and met up with winner Amy Duong and Sara Lopez of 8th Continent Soymilk to present the check in-person!
Hawthorne Elementary School Principal, Ms. Scott, said she was very happy and excited about the donation. The event started with a group of Hawthorne’s choir serenading the audience. Ms. Scott, principal, went on to express how ecstatic they were to receive the donation.

“We are going to use this donation to purchase iPads and new computers that we really need! We want to prepare our children for the age of technology and make sure they leave here equipped with the knowledge they need.”

Ms. Scott then presented Amy Duong, the Grand Prize Winner of Hollywood Moms’ Club.

Ms. Duong then presented Sara Lopez of 8th Continent Soymilk to speak.

Vegan Apple Pie Coffee Cake

With Memorial Day coming up, we make sure to pay homage to everyone who fought to keep this country great. We mount American flags, buy fireworks, and bake apple pies. This year, we wanted to do a little twist on the traditional apple pie so we made this awesome Apple Coffee Cake.

Apple Filling

Ingredients:

  • 3/4 cup light brown sugar
  • 1/4 cup flour
  • 3/4 cup ground cinnamon
  • 7 medium apples, peeled, seeded, and thinly sliced
  • 1 lemon, zested and juiced

Directions:

After you have peeled, seeded, and thinly sliced your apples; place them in a large pot.

Add all dry ingredients and lemon zest and juice.

Turn stove top to medium high heat, cover, and make sure to stir every couple of minutes so the brown sugar will not burn.

Allow to cook for about 15 minutes or until the apples are al dente.

Set aside and let’s get started on the batter!

Batter

Ingredients:

  • 2/3 cup 8th Continent Soymilk + 2 teaspoons lemon juice
  • 2 tablespoons cornstarch + 1/2 cup of water
  • 2 1/2 cups of flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 3/4 teaspoon of salt
  • 1/2 teaspoon of ground cinnamon
  • 2/3 cup canola oil
  • 1 tablespoon of sugar+ 1 teaspoon of cinnamon (for sprinkling)

Directions:

Preheat oven to 350 degrees fahrenheit.

In a small bowl pour mix together 8th Continent Soymilk and lemon juice and allow to sit for 5 minutes to curdle.

In another small bowl mix together corn starch and water.

Combine all dry ingredients, besides the cinnamon and sugar mixture, in a medium sized mixing bowl. Add all liquid ingredients. Mix until just combined to keep a thick consistency.

Take your lightly greased pan and spread 1/2 of the batter along the bottom.

Pour in apple filling from earlier.

Put the rest of the batter in blobs on top, allowing some of the apple mixture to peek through.

Sprinkle the top with the cinnamon and sugar and place in the oven for 45 minutes, checking on your coffee cake every 15 minutes to make sure it doesn’t get overcooked.

This is the perfect dessert to enjoy with an ice cold glass of 8th Continent Soymilk or maybe even atop some ice cream!

Blue and Red Smoothie for Memorial Day

This red and blue smoothie is perfect to serve at a picnic or Memorial Day event! Not only is it pretty, but it’s also very healthy.

Ingredients:

  • 1 cup Baby Spinach (divided)
  • 1 cup 8th Continent Soymilk (divided)
  • 1/2 cup frozen strawberries
  • 1/2 cup frozen blueberries
  • 1 tablespoon ground flax seeds (divided)
  • 1 ripe banana (divided)

Directions:

Put 1/2 cup baby spinach, 1/2 cup frozen strawberries, 1/2 tablespoon flax seeds, 1/2 peeled banana, and 1/2 cup of 8th Continent Soymilk in a blender and blend until all elements are chopped up and it is smooth. P0ur 1/2 of your concoction into the bottom of your serving glass and pour the other half in a glass to set aside and top off the smoothie once completed.

Rinse blender and put in 1/2 cup baby spinach, 1/2 cup frozen blueberries, 1/2 tablespoon flax seeds, 1/2 peeled banana, and 1/2 cup 8th Continent Soymilk. Blend until smooth.

Pour the blueberry smoothie gently on top of the strawberry smoothie. Top off with the strawberry smoothie you set aside. There you have it! A patriotic, healthy and delicious smoothie for this holiday!
