Strawberry Shortcake for your Sweetie!

Nothing says “I love you” more than a homemade dessert to share with your sweetie. Both of these recipes turned out SO well- I may have to make these for every special occasion from here on out!

First let’s make the vegan whipped topping so it can cool while we make the biscuits and strawberries.

Vegan Whipped Topping for Two

Ingredients:

  • 1/2 cup 8th Continent Vanilla soy milk
  • 1 cup vegetable oil
  • 2 Tablespoons maple syrup

Place 8th Continent Vanilla soymilk and 1/4 cup vegetable oil in blender. Blend at highest speed and slowly drizzle in remaining 3/4 cup vegetable oil. Blend in maple syrup. As you continue blending your whipped topping should thicken. Place in freezer to chill.

Strawberries!

Ingredients:

  • 4 cups of strawberries
  • 2 Tablespoons of sugar

Take about 4 cups of fresh strawberries. Cut off the top green leafy part and half the strawberries and put into a bowl. Add sugar and toss strawberries until equally covered. Cover the bowl and put in the fridge to chill for around 25-30 minutes.

Heart Shaped Shortcakes

Ingredients:

  • 1 ½ cup all-purpose flour
  • ¼ cup and 2 T. white sugar
  • 2 ½ t. baking powder
  • ¼ t. salt
  • 6 T. dairy-free soy margarine, cut into pieces
  • ½ cup 8th Continent Soymilk (Any variety)

Preheat the oven to 400 degrees and line a cookie sheet with parchment paper and set aside.

In a food processor, mix together  ¼ cup sugar, flour, baking powder and salt until well-mixed. Add the dairy-free soy margarine, pulsing until the mixture resembles fine crumbs. With the machine still running, add 8th Continent Soymilk gradually, until the dough just begins to hold together and pull away from the sides of the bowl.

On a lightly floured surface, turn out the dough and pat till flat. Take your heart shaped cookie cutter and cut out your biscuits and place on the parchment paper-covered cookie sheet. Sprinkle lightly with sugar and bake for 17-22 minutes. Keep watch of the biscuits and when you see the edges turn a golden brown, that is when to pull them out! Let biscuits cook on cookie sheet.

Remove the whipped topping from the freezer. Fetch the strawberries from the fridge. And to make it super romantic drop the strawberries into a large wine glass, add the whipped topping and the heart-shaped biscuit to top it off.

How to Transform your Charlie Brown Christmas Tree

I buy fake trees.

There, I admitted it.

There are several reasons: there is no pine needle cleanup party after disposing of the tree, I’m pretty sure my dog may attack the tree, etc. etc. But the main reason is because my older brother is allergic to real pine trees and if I had one in my front room, not only would he not be able to come over for Christmas, but neither would my adorable 2 year old niece and my sister-in-law. And that just won’t do!

I bought a little white, pre-lit, 5 ft. tall Christmas tree. Now I knew exactly how it was going to look out of the box… not that impressive. But I also knew I could work with it and transform it into something beautiful and stunning! So here are my tips on how to transform your small little Charlie Brown Christmas Tree into a fabulous and luscious tree that won’t cause allergic reactions!

Poor Thing…

First thing is first, get that tree out of the box and start fluffing those branches! Run your hands against the grain of the tree limbs and let the pines come back to life. Try to keep the limbs evenly spaced out.

Once you have fluffed enough, take some artificial flowers and arrangements and start sliding those into places that seem to need more girth.

Already looking a little better

I used all silver flower arrangements to contrast and compliment the white of the tree. After you have poked your flower arrangements into the middle pole of the tree, you can then string your garland.My garland is made of some adorable little silver and blue bells. After I strung my garland, I started to get out the ornaments!

My mother taught me a tip growing up that you hang the smaller ornaments at the top area and your larger ornaments at the bottom to create an effect of the tree looking much larger at the base.

Once you have hung your larger ornaments, you can now hang the smaller ornaments throughout or wherever you see needs a little extra something something.This is also the time when if you have long dangly ornaments you can place those. I typically also keep snowflakes or something else lightweight for a final decoration touch to add to any gaps that may not have yet been filled.

Now plug it in and enjoy!

How to make your own stocking and an 8th Continent Soymilk Giveaway!


Sure, you can always buy a stocking from the store, but I couldn’t find one with the colors I wanted and I always love crafting around the holidays! Follow these simple steps to make your very own holiday stocking!

Supplies

  • material for the boot of your stocking
  • material for the top cuff of your stocking
  • sewing supplies
  • scissors

Directions

Fold your material in half so there are two layers.

Take a stocking you have lying around and place it over the material.

Cut around the edges of the stocking, leaving about an inch to sew the seam.

As you can see, I placed one side of my stocking along the folded part and the top of it at an opened part as to not have to sew along that edge.

Sew along all the edges, making sure to leave the top open.

Don’t worry if your sewing is a little crooked, we will be turning the stocking inside out to create a neat seam.

For the cuff of the boot, take two strips of a different colored material and sew them at one side, letting the other side have extra material larger than the top opening of the boot. Do not sew the cuff onto the boot yet.

Now, turn your boot inside out revealing the clean seam you first had sewn.

Tuck the cuff material into the top of the boot material.

make sure the rough seem for the cuff is towards the toe side and the open end is by the heel.

Sew around the top part of the boot and the bottom part of the cuff so that they are connected.

Make sure not to sew the open end of the cuff yet.

Cut a strip of material from the same color you made the boot out of, fold it in half, and sew along one side.

Once you have sewn the strip of material that will be used to hang your stocking, fold it in half and tuck the open ends of the strip of the material into the open-ended cuff.

Sew the cuff closed, going over the folded material you tucked inside.

Now you are ready to fold your cuff down and hang! That is… if you can get your dog to stop trying to help out with the craft…

You can add some more fun with glitter, puff paints, buttons, however you want to decorate your stocking! This is a great way to get the kids involved with crafting as well.

Why I Rock Today- Diaper Improv

Yesterday was my nieces 6th birthday and to celebrate the whole family decided to go bowling in the late afternoon. It was a last minute decision, the debate was bowling or the beach and somehow the air conditioning and food and drink service won out over the 95 degree heat, searching for parking at the crowded beach and lugging coolers and umbrellas over the hot sand.
Surprising.

Due to some poor planning on my part my son went without an nap and we pushed through to the party. He, of course, fell asleep in the car for ten minutes on the way there but luckily he was in fantastic spirits once he saw his eight cousins, eight aunts and uncles, and Grammie and Papa were all there as well.

The moment we walked into the bowling alley my husband looked at me with a sour face and said, wow, he has a serious poopy diaper. I took him in the bathroom and changed him with what was the last diaper in my bag. I couldn’t believe I had left the house without replenishing his diaper bag. But I breathed a sigh of relief that at least I had that one, he very rarely has more than one poop in the span of a few hours.
He got all cleaned up and we bowled our hearts out. We were all having a blast. All the ‘big boys’ were making side bets that eventually got thrown out because the little one’s were bowling during their turn and us moms were armed with sanitary wipes since the kids were going back and forth from bowling to shoveling chicken fingers in their mouth.

About an hour before we were leaving I smelled it, my son had another poopy diaper. Are you kidding me? Just my luck. Usually I would have extras in my car but I could see right where I put them in the garage when I cleaned my car out the day before and failed to put them back in. And wouldn’t that just beat all that every one of his cousins at the party was potty trained. I had tons of wipes and not a single diaper. I scanned the bowling alley for other moms with un-potty trained children. Nothing. My sisters looked in their cars for an ‘emergency’ diaper that might be lying around. Nothing.

I needed to do something fast since the time frame for cleaning the poop off his butt before it gave him a diaper rash was quickly closing in on me. The solution finally came down to borrowing a pair of Tinkerbell undies from my three year old niece (with my sister’s permission of course), leaving her underwear-less in her little stretch pants, and filling it with paper towels. We were quite a site to behold in the bathroom, my niece pulling off her little fairy underwear while I wiped my son down on the counter of the bathroom (who doesn’t install a diaper changing table in the women’s room of a bowling alley???). I was just waiting for the awkward moment when a stranger walked in as I was putting the purple and pink undies on my son and shoving it full of paper towels.

My son ran right back out to the bowling lanes without missing a step—what a little trooper. My three year old niece then wasted no time in telling everyone she saw that her cousin Charlie was wearing her favorite Tinkerbell underwear. Hey, sh…stuff happens☺

Why I Rock Today- Beach Trip!

I feel like a whale or other large seam mammal of some kind as I waddle onto the beach in my bikini, my belly protruding triumphantly in all its massive glory. It’s summertime and while the idea of going to the beach and schlepping towels, umbrellas, coolers, and beach toys through the sand is not what I had in mind four weeks before baby number two is due, I have been having a blast.

Now, don’t get me wrong, my husband is truly the pack mule. I giggle as I watch him haul everything through the hot sand and around all the people—it reminds me of John Candy’s character in the movie Summer Rental.

It’s amazing how an already spunky two year old can arrive at the beach and suddenly have even more energy than you thought possible. Once his little toes touched the sand and he saw water up ahead he couldn’t be stopped. He chased after the birds, he ran into the surf with me and my husband, he yelled “there’s a biggy one” every time a wave crashed. And there I was by his side, not wanting to miss a single “yaaaaay” or amazed expression as he sat on his dads shoulders shivering in the cool water spotting dolphins only yards away. He was in awe of the beach and I was in awe of him.

Not even an enormous belly, nor questions from other beach goers such as “WOW, were you due like a week ago?” or “Geeze, how many do you have in there?” could keep me from enjoying the beach with my husband and son.

Nice Job Mom: We Rock Winner meets Sara Bareilles!

Nice Job Mom: We Rock Contest Winner Sandy Nevels, with her son, Alex

Our Nice Job Mom: We Rock Contest has wrapped up and we have chosen all of the winners!

Our Grand Prize Winner, Sandy Nevels, won a trip for two to see Sara Bareilles in concert VIP style! Sandy decided to take her son along to enjoy her winnings. This included two roundtrip plane tickets to LA, three days and two nights at a hotel, two VIP all-access tickets and passes to Sara Bareilles live in concert and they got to meet and greet with the phenomenal singer! Not only that but they arrived to the concert in style… meaning a limo, and she was provided with a video camera to catch the whole amazing VIP experience!

As if that wasn’t enough Sandy will also be able to choose a school that we will donate $10.000 to their music program on her behalf!

After her trip this past weekend we jumped on the phone with Sandy to chit chat with her and ask her how she enjoyed her trip!

So… How was it?!?

It was really fun! We flew into LAX and then got over to the Renaissance Hotel and entered our room and found some goodies waiting us, including a signed CD by Sara Bareilles. The room had a fantastic view and it was a gorgeous hotel.

Right after we arrived we took off to go to Venice Summer Fest to catch up with the 8th Continent Soymilk Street Team, grab some Soymilk and walk around the boardwalk.

We also went to Santa Monica Pier, which was beautiful as well. It was a real treat because neither me or my son had ever been.  We went to L.A.Ink as well. My son loves that show so we stopped in so he could take a look at where the show gets filmed.

And then we also went to the LA Zoo as well! We didn’t want to waste any time on this trip, so we bounced all around.

That is so awesome! Sounds like you got to experience a ton of things that LA has to offer. What would you say was the highlight of your trip?

Do you even have to ask? Meeting Sara Bareilles! She has such a beautiful voice and she hung out with my son and I and talked for a while before the concert. You wouldn’t have even known she was famous. Very down-to-Earth and was so nice! My son and I both took pictures with her and she actually made time for us before the concert. And the concert itself was awesome. Sara Bareilles has an amazing voice.

Not only did we get to meet Sara Bareilles, and catch her in concert, but we also wandered onto the set of a movie being shot. It was outside El Capitan Theatre, the street had been blocked off and there were a bunch of people and cameras and all of that. Turns out they were filming scenes for the new Muppet movie! The next morning we swung by again and talked with a few extras.

Sounds like you had some pretty cool adventures! And you brought your son along with you, which yet again shows why we picked you for being a Rock Star Mom! So we gotta ask, why do you choose 8th Continent Soymilk over other brands?

Well the straight answer is this: It’s better than the other brands. 8th Continent is really smooth and natural tasting.
